One Pot Recipe: Salmon And Rice In Rice Cooker

Ingredients


  • 2 cups Jasmin rice

  • 460g salmon skinless fillets

  • 2.5 cups Water

  • 1/4 cup mushroom dark soy sauce

  • 1/4 cup light soy sauce

  • 2 tablespoon raw sugar

  • 1 tablespoon white pepper

  • 4 stalks of garlic chives finely diced

  • 2 slices of ginger

  • 1 bunch of broccolini, roughly chopped

  • 4 brown Swiss mushrooms, roughly sliced

  • 3 stalks of spring onions, diced

  • 6 soft boiled eggs boiled from boiling water 8 minutes then put a cold water bath


Instructions


Put the rice into the rice cooker bowl and wash the rice


Add ginger, garlic chive, broccolini and mushroom to the rice cooker and mix well with the rice


Mix the water, dark and light soy sauce, sugar and pepper in and stir well


Pour sauce over the rice and veggie mixture and mix well


Lay the salmon fillets on top of the rice and veggie mixture


Start the rice cooker in rice cooking mode


When rice is cooked, break up the salmon fillets and mix well with the rice and veggies


Add the boiled eggs and spring onions and stir well


Warm for a few minutes then serve.


Serves 4 to 6
